Cummins 5.9L, 230HP overheating

I have 1999 Dodge Ram 2500-5.9 liter Cummins. While Towing it will Heat up to approx 210 degrees. Excessive when temp outside is over 95 degrees. Only once did the CHECK GUAGES light come o. as soon as I hit normal Freeway speed it cam down to about 190 to 200. It has a 185 degree thermostat in it now.
