One simple, low-tech way to tell is to find an inconspicuous area and put a grinding wheel to it...if it doesn't shoot off sparks...its aluminum. A better way to find out, though, would be to find out what was used by the manufacturer of the coach...for example, the GMC PD-4106 I'm looking at is an aluminum body.
As for the polishing part...either metal can be polished using a buffing wheel and the right grade of jewelers rouge. Stainless though, by its characteristics, will shine easier...but with the above materials and persistence, it is possible to polish the aluminum to a mirror finish.
