I was wondering what the most popular models used for conversion? What year, model, etc.? Also, which has the most parts available?

Well from the research I did, I looks like Prevost XLII Entertainer and H3-45 VIP bus shells are the most widely used.

Prevost, Eagle, MCI, RTS, Crown... depends on what you want and what your budget is. Check out some of these conversion sites and ask questions.
