I have a '94 Class A M/H with a GM 454 V-8 engine. On a cold start, the oil pressure gage on the dash will show 75 psi. When the engine is at operating temperature (210 Deg F) the pressure gage will hold at 50 psi for a while. The needle will begin to fluctuate between 40 and 50 psi, then hold on 40 psi for a while. Then it will hold at 50 psi and repeat. It doesn't matter what load or RPM the engine is operating under. Engine temperature is always OK. Is this an indication of a problem needing a mechanic's attention?
I would suspect your oil pressure gage- all that I have seen increase as the rpm's increase? Is there enough oil in it? I would not assume it is the culprit without further examination but that is where I would start.
Mark is on the right track, install a mechanical analog gauge, (line can be teed to where the electrical gauge sending unit is mounted), and see what your results are.
